Good old comfort food....tweaked to be healthier than Grandpa's original

Recipe Ingredients for Grandpa's Rice Pudding

1/3 c uncooked rice
4 cups nonfat milk
1/4 tsp salt
2 tablespoons butter
1/2 tsp nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla

Recipe Directions for Grandpa's Rice Pudding

  1. Preheat over to 300 degrees.

  2. combine ingredients into a large flat pan (6 1/2 x 10 1/2" or larger)

  3. sprinkle 1/2 cup of zero calorie sweetener (such as splenda or Truvia) on top, stir well.

  4. Bake at 300 degrees, stirring with a fork every 15 minutes, carefully turning under the brown top and scarping the edges.

  5. cook until rice is perfectly tender and pudding is thick and creamy, NOT dry.

  6. Serve hot or cold
