Pasta Supper for Two when the cupboard is bare and the freezer isn't. Use what you have: shrimp, chicken, mushrooms, fresh/frozen broccoli etc. Use all the same protein or mix as this indicates. Beef or pork (in any form) would also work. If beef or pork, a darker wine would be tastier. All beef & mushroom would call for a red cooking or table wine. Open your cupboard and freezer and see what you have. Cooking is an adventure.

Recipe Ingredients for Grandpa's The Cupboard is Bare the Freezer Isn't Linguine

4 cloves garlic, minced
1/4 cup yellow onion, diced
3/4 cup white wine
8 oz tomato sauce
1/2 tsp oregano, dry
1/2 tsp thyme, dry
1/2 tsp basil, dry
1 pinch red pepper flakes
1 pinch kosher salt
4 oz large shrimp, cooked
6 oz skinless chicken breast
1/4 pound linguine

Recipe Directions for Grandpa's The Cupboard is Bare the Freezer Isn't Linguine

  1. Put on pasta water (for this amount of pasta a large, heavy sauce pan will do with 2 1/2 qt water.).

  2. Clean & mince garlic and onions

  3. Thaw any frozen meat and cut large pieces into 1 inch strips or cubes.

  4. When water is ready stir in pasta (stir occassionally to separate pasta) and put heat under large skillet with 2 Tbsp olive oil.

  5. When skillet is ready add onion & garlic to soften and release flavor then add any UNCOOKED meat and cook till color change.

  6. Add tomato sauce, bring to simmer then add herbs & spices. Stir & let simmer 2 minutes then carefully add wine and stir together.

  7. Bring to high simmer and let reduce by one half (1/2).

  8. During reduction add any COOKED meats so it can heat through and acquire the flavors you have created.

  9. Don't recook meats, especially seafood.

  10. About 1 minute before pasta is done remove and drain then add to sauce skillet, toss and let pasta finish in the sauce.

  11. Divide on 2 plates or pasta bowls and serve with garlic bread.
