A fall variation on my grandfather's leaven bread recipe.

Recipe Ingredients for Grandpa's Bread

2 cups white flour
2 cups whole wheat flour
3/4 cup maple sugar
1/4 cup olive oil
7 g dry yeast
1 cup water

Recipe Directions for Grandpa's Bread

  1. Activate the yeast following the instructions on the package. Use the quantities of sugar and water indicated from the total in the recipe.

  2. Stir together the yeast with the oil and sugar in a large mixing bowl.

  3. Add in the flour a half cup at a time, alternating between types.

  4. When dough becomes too thick to stir, begin kneading by hand. The exact amount of flour needs to be adjusted by feel, using slightly more or less than is listed until the dough is springy but not overly sticky.

  5. Allow dough to rise in a warm place with a moist towel over top for 45 minutes.

  6. Knead dough and form into desired shape, two loaves, round rolls, etc.

  7. Lightly oil surface of dough and cover again to let rise, make sure towel is still damp.

  8. Bake in oven at 350F until crust is golden brown. Cooking times will vary based on shape being cooked.
