My grandmother made an apple cake that was delicious. I modified it for my diabetic husband and I.

Recipe Ingredients for Grandmother's Apple Cake Modified

1/2 cup diced apples
1 cup pecans
2 eggs
1/2 cup shortening
2 cups no calorie Splenda
1/2 cup dark corn Syrup
2 1/2 cups all purpose flour

Recipe Directions for Grandmother's Apple Cake Modified

  1. Set oven to 350*

  2. Cream eggs, syrup, shortening and Splenda. Add flour then pecans and apples. Pour into a bunt pan or a pound cake pan. Cook it about 45 minutes to an hour or until a fork inserted into the center comes out clean. Note the serving sizes. I cut the slices very thin to stay within my guidelines for snacks.
