Recipe Ingredients for Grandma's Spicy Beef Stew

1 pound beef, flank steak, cut into 1/2-inch cubes
1 cup potatoes, peeled and cubed (leave the peels if you want more of the nutritional value the potato offers)
1 cup carrots, sliced
1 cup celery, chopped
1 cup zucchini, chopped
1 cup red bell peppers, chopped
1 pepper, jalapeno, seeded and chopped*
1 1/2 teaspoons chili powder
1/2 teaspoon kosher salt
16 oz tomatoes, stewed, undrained
2 tablespoons minced fresh cilantro or parsley
1 teaspoon dried oregano
1 teaspoon dried basil

Recipe Directions for Grandma's Spicy Beef Stew

  1. Brown beef cubes in non-stick pan with no-calorie non-stick spray until brown on all sides.

  2. Add onions, garlic, peppers and cook until onions transparent.

  3. Add enough of the chicken broth to cover, and scrape all the essence from the bottom of the pan.

  4. Throw in crock pot and add everything else except potato flakes (stir those in gradually alternating with the rest of the chicken broth to prevent lumps)

  5. Cover and cook on low all day or until veggies are tender.
