Recipe Ingredients for Grandma's Special

1 unit (yield from 1 lb ready-to-cook chicken) Chicken, roasting, dark meat, meat only, raw
7 unit (yield from 1 lb ready-to-cook chicken)(113 g) Chicken, roasting, dark meat, meat only, raw
2 tbsp Vegetable Oil, Canola
1/2 oz 1 lb. Bag - Dried Guajillo Chiles
1/2 oz 1 lb. Bag - Dried de Arbol Chiles
1.5 cup Soup, Chicken Broth
1 cup Tomatoes, Red, Ripe
8 oz Tomatillos
0.75 cup Cream, Sour, Cultured
6 oz Plain Lowfat

Recipe Directions for Grandma's Special

  1. In a large skillet, brown the chicken on both sides in the vegetable oil. Set aside, but do not rinse skillet.

  2. Soak the chiles in the broth until soft. Place the softened chiles, the broth, tomatoes, tomatillos, garlic, onion and cumin seeds in a blender and puree until smooth. Pour this mixture into the skillet in which the chicken was browned. Heat the puree, stirring, until it comes to a boil.

  3. Return the chicken to the pan, lower the heat to medium, and cook, covered, until the chicken is cooked through. Remove the chicken and keep warm.

  4. Add the jocoque to the sauce and stir to combine and heat through. Taste and add salt if desired. Serve the chicken, bathed in sauce, in shallow bowls. Accompany with warm corn tortillas
