Hearty potato soup. Very popular with my children even without meat!

Recipe Ingredients for Grandma's Potato Soup

5 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
4 pat (1" sq, 1/3" high) Butter
2 cup Milk, Lowfat, Fluid, 1% Milkfat
2 tbsp Corn Starch
1 tsp Salt, Table
1 tsp Pepper, Black
4 tbsp Reduced Fat Sour Cream
1/4 cup Fancy Colby-Jack Shredded Cheese
5 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Grandma's Potato Soup

chop potatoes into cube. Boil in four to five cups of water until cooked through. add butter and salt and pepper. Add milk and bring to boil. combine corn starch and cold water in small cup, mix completely and set aside. Add sour cream and stir. Temper cornstarch with two tablespoons of soup mixture, stir completely and add to soup. stir and wait for soup to thicken. Garnish with green onion and shredded cheese.
