Recipe Ingredients for Grandma's Marinated Asparagus

4 cups cooked asparagus, steam & cool to room temp
1 cup tomatoes, chopped
1 green onion, chopped
2 cups red beans, cooked or sprouted
1 clove garlic, pressed
3 tablespoons olive oil
1 tablespoon balsamic vinegar
3 tablespoons rosemary, marjoram, thyme
1 tsp dijon mustard
1 dash salt
1 dash pepper
1 dash paprika

Recipe Directions for Grandma's Marinated Asparagus

  1. Peel garlic and press into large salad bowl.

  2. Wash asparagus and steam lightly. Rinse with cool water and let cool to room temperature.

  3. Chop tomatoes into bite size pieces and reserve.

  4. Wash and finely chop fresh herbs.

  5. Measure oil and vinegar into salad bowl.

  6. Add herbs, mustard, salt, pepper and paprika.

  7. Mix dressing thoroughly, then add green onion, tomatoes, beans and asparagus.

  8. Toss thoroughly and chill for one hour (or longer).
