This is a stew adapted from one of my grandmother's most requested Sunday dishes -- especially popular at those church lunches and at big family dinners. My preference is to have a bottle of Tabasco close at hand!

Recipe Ingredients for Grandma's Mac & Tom Stew

32 oz canned tomatoes
4 oz tomato paste
16 oz vegetable juice
16 oz vidalia onion
6 oz bacon
1 clove garlic
1 1/2 c beef broth
4 oz apple sauce
1 t salt
1 1/2 t pepper
16 oz elbow macaroni

Recipe Directions for Grandma's Mac & Tom Stew

  1. Chop Vidalia onion (or other sweet onion) into 1" pieces, and snip bacon into 1" pieces as well.

  2. Using a deep stock pot, cook the bacon pieces crisp, and then remove them from their grease and set aside.

  3. Use bacon drippings to caramelize onions.

  4. Add beef broth to deglaze the pan, then add diced canned tomatoes and their juice, V-8 juice, bacon, crushed garlic, apple sauce and salt/pepper. Use a whisk to blend in tomato paste. Bring to a boil, then lower heat and cover. Simmer 30 minutes. Adjust seasoning to taste, using a heavy hand with the pepper.

  5. Bring a separate pot of water to a boil and add macaroni and cook until tender -- about 7 minutes at a low boil.

  6. To serve, use a drained 1/2 of pasta in the bottom of a bowl, and ladle tomato soup over the noodles.
