Delicious home made noodles just like Grandma used to make, but calorie friendly!

Recipe Ingredients for Grandma's Chicken and Noodles

1/2 cup flour
2 tablespoons egg beaters
2 tablespoons skim milk
2 cups fat free chicken broth
1 cup peas, no salt added
1/3 cup water
3 tablespoons flour
1 Salt, pepper to taste

Recipe Directions for Grandma's Chicken and Noodles

  1. For the noodles, put the flour in a medium bowl; in the center, make a well about the size of an egg. Pour the egg beaters and milk into the well. Using a fork, stir until the mixture forms a ball.

  2. Lightly flour a cutting board. Lightly knead the dough for 1-2 minutes, or until dough is fairly smooth and slightly elastic. Cover with a dry dish towel and let rest for 15 minutes.

  3. Lightly flour the cutting board. Roll the dough to a 9 x 6 inch rectangle. Using a knife or pizza cutter, cut the dough into strips about 3 inches long and 1/2 inch wide. Cover with the dish towel. Set aside.

  4. In a medium sauce pan, stir together the broth, chicken, peas, salt, and pepper. Cover and bring to a boil over high heat. Reduce the heat to medium-high.

  5. Add the noodles. Cook for 4-5 minutes, stirring occassionally. The noodles should be tender to the bite and no longer appear chalky in the center when cut in half.

  6. In a small bowl, whisk together the water and 3 tablespoons of flour. Stir into the chicken mixture. Cook for 2-3 minutes, or until the mixture thickens, stirring occassionally.
