Light, spicy recipe with greek flair. Could easily alter to use scallops or even chicken.

Recipe Ingredients for Grandma's Baked Greek Shrimp

1 lb medium shrimp
3/4 cup feta
22 oz canned diced tomatoes
1 medium onion
1/4 cup shallot
4 tbsp olive oil
1/4 cup capers
1 tsp salt

Recipe Directions for Grandma's Baked Greek Shrimp

  1. Quickly saute peeled de-veined shrimp in olive oil until just done and set aside.

  2. Saute onions and shallot in olive oil in seperate pot. Add tomatoes, salt and pepper, and pinch of red pepper flakes to taste. Simmer for 10 minutes. Add capers and cooked shrimp. Mix to combine and pour mixture into small square baking dish. Top with feta and bake at 350 until bubbly (about 25 minutes).
