This is a recipe my grandmother used during the depression-- baked in coffee cans. Make sure you use the cans with 5 or more rings in them.

Recipe Ingredients for Grandma Northwick's Pumpkin Bread in Coffee Cans

3 cups sugar
1 cup canola oil
4 eggs
3 1/2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2/3 cups water
20 oz pumpkin
1 cup chopped pecans

Recipe Directions for Grandma Northwick's Pumpkin Bread in Coffee Cans

  1. Mix sugar, oil and eggs together. Add flour, soda, cinnamon and salt. Add water, pumpkin and pecans. Stir to mix all. Pumpkin Pie Mix may be used instead of canned pumpkin.

  2. Grease and flour 4, one-pound coffee cans, fill half full. (spray with Pam) Ones with 5 rings work best.

  3. Bake 75 minutes at 325 degrees. Check at 65 minutes with a broom straw.

  4. Makes 4 loaves. Cool on wire rack. Turn-out and slice in "rings" . About 7 slices per can. Serve with whipped cream or cream cheese. Wrap extra loaves in saran wrap to maintain freshness until used. Clean coffee cans and store wrapped loaves covered, in fridge until ready to use. Cans may also be frozen.
