Grandma Katie's homemade chicken noodle soup

Recipe Ingredients for Grandma Katie's homemade chicken noodle soup

30 oz chicken, boiled, shredded
6 tsp chicken boullion
4 eggs
1/4 cup 2% milk
4 cups flour

Recipe Directions for Grandma Katie's homemade chicken noodle soup

  1. Boil whole chicken, or cook all day in crock pot with chicken boullions.

  2. Make noodles in large mixing bowl add 4 eggs, 4 tbs. milk, 4 tbs water. (Grandma actually always used 1/2 and 1/2 but I always use milk) Add 2 or more cups of flour and mix. It does get a little touchy at this point. Keep adding flour until dough is no longer sticky. Break dough ball into two and roll out each half separately. Now cut into noodles. (I have a special cutter that was actually for dicing vegetables - looks like about five pizza cutting wheels. Grandma would roll the dough and slice with a knife, so that does still work if you can't find a descent cutter). Separate noodles and let air.

  3. Strain contents of boiled chicken into large stock pot carefully keeping chicken in strainer. Place liquid on stove top and heat to medium hot to boiling.

  4. Remove chicken from bones and shred. (I only use half of the chicken meat and save the other half for a recipe I have for shredded chicken meat).

  5. Add shredded chicken to liquid and then slowly and gradually add noodles making sure they don't clump together in liquid. Noodles are done when they turn white and float.

  6. A fun variation to this recipe is to add a can of hot rotelle diced tomatoes and jalopenos. Not everyone likes the spicey noodle soup though so we don't do very often.
