Awesome comfort food, great Thanksgiving or Christmas dinner side item. *Servings based as a regular dinner side--can easily equal 20 servings if people are only getting "a little" as is common with big holiday meals. **Finding the correct squash settings was difficult--should be 2-3lbs total of both yellow & zucchini squash.

Recipe Ingredients for Grandma Jones' Squash Casserole

3 cup, sliced Squash, Summer, Zucchini, Includes Skin
3 cup, sliced Squash, Summer, Crookneck And Straightneck
1 1/2 cup Onions
1 1/2 cup, crushed Crackers, Saltines
1 large Egg, Whole
1/2 cup Salad Dressing, Mayonnaise Type, Regular
1 medium Green Bell Pepper
1/2 cup ChefStyle Sharp Cheddar Shredded Cheese
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Lemon Pepper

Recipe Directions for Grandma Jones' Squash Casserole

  1. Preheat oven to 350 degrees.

  2. Saute vegetables with seasonings until soft, onions translucent.

  3. Mix in Mayo.

  4. Remove from heat.

  5. Temper in whole, raw egg carefully and stir for about 5min.

  6. Crush sleeve of saltine crackers and mix in.

  7. Sprinkle shredded sharp cheddar on top.

  8. Place in oven for 30-40min, until bubbly and cheese slightly toasted.

  9. Enjoy!
