Recipe Ingredients for Grandma Christensens Elbeskivers

2 cups flour
2 tablespoons sugar
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
5 whole eggs
2 cups buttermilk

Recipe Directions for Grandma Christensens Elbeskivers

  1. Sift flour, baking soda, and baking powder and set aside.

  2. Separate yokes from whites. Beat whites until fluffy and firm. Set aside.

  3. Beat egg yokes with sugar until creamy. Add salt and butter milk and mix well at medium speed in mixer.

  4. Add flour slowly while mixing. Mix until creamy and then incorporate the stiff egg whites gently with a spoon.

  5. Heat elbeskiver pan to medium on stove top. Add a couple drops of oil in bottom of each cup.

  6. Fill each cup about 3/4 full with the batter. When batter starts to show bubbles in the middle use a knitting needle to break the edges loose and turn over.

  7. Check by inserting toothpick or knitting needle coming out clean.

  8. Should make about 34 little pancake like balls.

  9. Eat plain or like my Grandma Christensen put a little dab of Raspberry Jam with a dusting of powdered sugar.
