Pumpkin Bread, recipe makes two loaves, slice each into 16 slices. Original recipe used 3 1/2 cups flour, and only 2 tsp soda.

Recipe Ingredients for Grandma B's Pumpkin Bread

2 cups soy flour
1 1/2 cups rice flour
1 cup sugar
1 cup oil
2/3 cup water
1/2 tsp salt
4 tsp baking soda
1 tsp cinnamon, ground
1 tsp nutmeg, ground
4 medium eggs
15 oz pumpkin

Recipe Directions for Grandma B's Pumpkin Bread

  1. Sift together the flours and sugar.

  2. Beat together oil and water.

  3. Stir all ingredients together.

  4. Pour into two greased and floured bread pans

  5. Bake 350 degrees for 1 hour.

  6. Remove from oven and let sit for 10 minutes before removing from pans.

  7. Cool completely before slicing each loaf into 16 slices.

  8. Freezes well.
