Recipe Ingredients for Grandma Bible's Lighter Best Bran Muffins

4 1/2 cups Fiber One
3 cups Sugar
5 cups Whole Wheat Flour
5 tsp baking soda
4 large Eggs
4 cups Buttermilk
1 cup Light Stick

Recipe Directions for Grandma Bible's Lighter Best Bran Muffins

  1. Preheat oven to 375 degrees.

  2. Mix all dry ingredients.

  3. Add eggs, butter, & buttermilk. Mix well.

  4. Spoon into paper liners that have been lightly sprayed with non-fat butter flavor cooking spray. This prevents the muffins from sticking to the liners.

  5. Bake for 20 minutes at 375 degrees or until they bounce back when the tops are touched lightly.

  6. You can substitute melted light stick margarine for the oil in the same amount. This makes it 119 calories and 4.1 grams of fat per muffin.
