Grandma Arrasmith's Chicken Chili Recipe

Depending on the consistency, this recipe can be considered a soup or a chili. Note: I use all organic ingredients for this recipe because I use it to help recover my immune system after I do detoxes or fasts.

Recipe Ingredients for Grandma Arrasmith's Chicken Chili

1 green bell pepper
1 red bell pepper
1 medium onion
1 1/2 lbs of chicken breasts
12 oz of corn
28 oz of diced tomatoes
16 oz of kidney beans
16 oz of pinto beans
32 oz of chicken stock
2 teaspoons of salt
2 teaspoons of pepper
1 teaspoon of cayenne pepper
1 teaspoon of chili powder
2 tablespoons of extra virgin olive oil

Optional Ingredients:
1/4 cup of green onion
1/2 cup sour cream
1/2 cup shredded cheddar cheese

Recipe Directions for Grandma Arrasmith's Chicken Chili

  1. Dice peppers and onion. Saute onions in 2 tablespoons of extra virgin olive oil.

  2. In a dutch oven or large pot, cook chicken thoroughly and season with some salt and pepper. When cooked thoroughly, shred chicken with two forks and replace in the dutch oven. Add sauteed onions and diced peppers to dutch oven. Add chicken stock, can of diced tomatoes, corn, kidney beans, pinto beans, cayenne pepper, chili powder, salt and pepper to dutch oven.

  3. Let simmer on medium to low for 2-6 hours, depending on the consistency this recipe can be considered a soup or a chili.

  4. Top with chopped green onions, sour cream and/or shredded cheddar cheese.
