Moderately warm tasty chicken and asparagus curry. Great with rise, whole grain pasta or vegetables.

Recipe Ingredients for Grand Beach Thai Chicken and Asparagus Curry

1 lbs chicken breasts
1 lbs asparagus
1 tbsp olive oil
27 cloves garlic
2 large onion
14 oz coconut milk
8 tbsp Red Curry Paste
1 tsp red pepper

Recipe Directions for Grand Beach Thai Chicken and Asparagus Curry

  1. Brown well garlic and onion in olive oil.

  2. Add curry paste, red pepper and coconut milk simmering till well blended for 5 minutes.

  3. Add bite sized pieces of chicken and 1/4 pieces of asparagus and 1/3 cup of water.

  4. Cook over high heat until boiling, lower heat to simmer and cover for 20 minutes stirring frequently.

  5. Serve over brown basmati rice or with whole wheat pasta or rice noodles.

  6. Chicken can be substituted with either hard tofu for a vegan version or shrimp can be used.

  7. Peas can be substituted for asparagus.

  8. The heat can be "bumped up" with more red pepper or my favorite using finely small fiery ground chile piquins.
