Mushroom, garlic, rice and onion in a sweet yellow pepper

Recipe Ingredients for Grand Beach Stuffed Sweet Yellow Bell Peppers - Veg

4 peppers
15 cloves garlic, finely chopped
10 rings onion , finely chopped
16 oz mushrooms
1 cup rice
2 tsp black pepper
2 tbsp olive oil

Recipe Directions for Grand Beach Stuffed Sweet Yellow Bell Peppers - Veg

  1. Remove tops of peppers and clean them.

  2. Parboil in enough boiling water to cover peppers for 5 minutes or microwave for in a covered container with a 1/4 cup of water for about 4 minutes.

  3. Cook standard long grain rice for filling.

  4. Remove peppers and let drain and dry and set aside.

  5. Slice mushrooms and finely chop the other ingredients.

  6. In a saute pan or skillet, heat pan to medium high and add olive oil.

  7. After oil has heated add garlic and onion and black pepper cooking for 3 minutes tossing to avoid burning.

  8. Add mushrooms to pan and cook until tender over medium high heat, adding small amounts of water as necessary to keep from sticking or burning on the pan.

  9. Mix rice and mushroom mixture together and evenly divide stuffing the 4 peppers.
