Indian Rogan Style Mushrooms in Spicy Tomato and Garlic Sauce

Recipe Ingredients for Grand Beach Rogan Shrooms (Rogani Kumbh)

1 (500g) onions
42 oz tomatoes
2 jalapeno peppers
10 cloves garlic
2 tbsp ground ginger
4 tbsp canola oil
4 tsps coriander powder
2 tsp cumin powder
1 tbsp red pepper powder
1 tbsp turmeric powder
2 tbsp garam masala
1 (1000g) mushrooms
8 tbsp yogurt

Recipe Directions for Grand Beach Rogan Shrooms (Rogani Kumbh)

  1. Put the quartered onion, tomatoes, green chillies, ginger and garlic into a food processor and grind into a smooth paste.

  2. There is no need to add any water to this while grinding as the juices from the tomatoes will provide sufficient liquid.

  3. Heat the cooking oil in a deep pan on medium heat, add the above mixture and all the powdered spices.

  4. Stir and fry till the oil begins to separate from the masala. Stir often to prevent the masala from sticking and/ When the masala is done (as above), add the mushrooms and stir gently.

  5. Season with salt to taste and add half a cup of warm water.

  6. Cook till the mushrooms are soft but not pulpy/ overcooked.

  7. Remove from heat and stir in the yogurt till fully blended.

  8. Garnish with chopped fresh coriander and serve with Jeera Rice!
