Veggie Chili, spicy but not two hot. Great over rice or mixed with a good whole wheat pasta.

Recipe Ingredients for Grand Beach Red Bean Chili

16 oz Red Beans
40 oz Tomato
14 oz Tomato Sauce
4 tbsp Chili powder
3 large onions
2 cups water
1 cup garlic
2 bell peppers
1 tbsp red pepper
2 tbsp canola oil
1 (51g) pepper, ancho, dried

Recipe Directions for Grand Beach Red Bean Chili

  1. Soak 1lb red kidney beans overnight.

  2. Brown garlic and onion in canola oil over high heat

  3. Add onions and cook until translucent.

  4. Add Red Bell Pepper and cook for 5 minutes

  5. Add cayenne red pepper and and chili powder.

  6. Add Tomato and Tomato Sauce, cook for 5 minutes.

  7. Be careful not to let anything stick to the bottom by stirring frequently.

  8. Lower to simmer and cook for 1 1/2 to two hours stirring occasionally, again make sure it doesn't begin to stick to the bottom.

  9. When the beans are cooked and soft, the chili is ready.

  10. Best if allowed to sit over night to allow the flavors to fully mix.
