Fresh grilled stuffed pablano peppers stuffed with baby maine shrimp , brown rice and hummus

Recipe Ingredients for Grand Beach Pablano Peppers Stuffed with Shrimp

4 Green Peppers
8 oz shrimp
1 medium onion
12 tbsp hummus
1/8 cup brown rice

Recipe Directions for Grand Beach Pablano Peppers Stuffed with Shrimp

  1. Chop onion and shrimp and mix with pre-cooked rice and prepared hummus.

  2. Clean and stuff peppers with the mixture, covering the very ends of the peppers with small bits of aluminum foil to prevent the mixture from falling out - this may be done in the oven under a broiler.

  3. Lightly oil the grill and the peppers (best to use a spray) and over medium heat grill peppers on side.

  4. Serve with a mixed green salad or with snap pea salad.
