New Orleans at its best. Using even lower fat and sodium ham and sausage will of course bring down the fat/calories and the sodium, i.e. use turkey Kielbasa and turkey ham for example. Tastes great either way.

Recipe Ingredients for Grand Beach Jambalya

8 tbsp Bay Leaf, whole
2 tsp white pepper, ground
2 tsp dry mustard, ground
3 tsp red pepper, cayenne
2 tsp gumbo file, optional
1 tsp cumin, ground
1 tsp black pepper, ground
1 tsp thyme, ground
12 cloves garlic, finely chopped
4 tbsp Olive Oil
8 oz ham, diced lean low sodium
16 oz Polska Kielbasa, diced
16 oz chicken, diced
3 cups onion, finely chopped
3 cups celery, finely chopped
2 cups green pepper, finely chopped
4 cups rice
8 cups chicken stock

Recipe Directions for Grand Beach Jambalya

  1. Prepare vegetables and mix spices and set aside.

  2. Over high heat brown meats in a very large heavy skillet in olive oil.

  3. Add vegetables and spices and cook for 10 minutes, scrapping pan bottom often.

  4. Add garlic and rice and cook for 5-7 more minutes until the mixture begins to stick excessively.

  5. Add stock and allow to come to a boil, be sure to scrap pan bottom completely.

  6. Lower to simmer and allow rice to cook until firm, about 20 to 25 minutes.

  7. Serve with alone or with Creole Sauce.
