A creamy and rich Eggplant dish with a kick. Additional yogurt can be added to lower the spices. Serve with basmati rice and a raita or Tzatziki.

Recipe Ingredients for Grand Beach Curried Eggplant

7 cups eggplant
2 tbsp olive oil
1 (300g) onions
9 cloves garlic
1/4 cup ginger, grated
2 tsp coriander, ground

2 tsp cumin seed, ground

1 tsp turmeric, ground
1 tsp cayenne
3 tbsp lemon juice
8 oz yogurt
3 tbsp cilantro, chopped

Recipe Directions for Grand Beach Curried Eggplant

  1. Preheat the oven to 450 degrees.

  2. Place the eggplant in a baking pan and prick them with a fork. Bake until very tender, about 3/4 hour. Set in a drainer.

  3. When cool enough to handle, peel the eggplant, discard any large seed pockets, and transfer the pulp to a strainer.

  4. Coarsely chop the eggplant or pulse quickly in a food processor.

  5. In a medium sauté pan over moderate heat, warm the olive oil and cook the onions until translucent, about 10 minutes.

  6. Add the garlic, ginger and spices and cook for five minutes. Add the eggplant.

  7. Heat through and then season with lemon juice.

  8. Add yogurt to marry the flavors.

  9. Add chopped cilantro and serve.
