Stuffed Poblano Peppers with Rice, Hommus, Chicken or Shrimp

4 Peppers, Poblano whole
1 cup rice
10 tbsp Hommus
1/2 cup onion
8 oz chicken, cooked
1 tsp cumin
1 tsp white pepper
1 tbsp tabasco

  1. Mix ingredients together in a bowl.

  2. Stuff each pepper with 1/4 of the mixture.

  3. Lightly coat filled peppers with spray olive or canola oil
