Recipe Ingredients for Grand Beach Chicken, Pineapple and Sweet Red Pepper Skewers

16 oz chicken, cut into 16 pieces
3 cups pineapple, cut into 16 cubes
1 Sweet Red Pepper, cut into 16 pieces
1 tsp Olive Oil
1 tsp white pepper
1 tsp Paprika

Recipe Directions for Grand Beach Chicken, Pineapple and Sweet Red Pepper Skewers

  1. Cut Chicken breasts, pineapple and sweet red pepper, each into nearly equal sized pieces.

  2. Soak 4 bamboo skewers in warm water for 30 minutes.

  3. In a mixing bowl mix all of the ingredients, including spices and oil and mix thoroughly covering all of the ingredients well.

  4. Grill or broil turning till chicken is completely cooked and peppers begin to blacken on the edges.

  5. Serve with Mango, Lime and Green onion Sauce
