Good summer side dish using fresh beet greens.

Recipe Ingredients for Grand Beach Beet Green Saute

12 cup beet greens
1 tbsp olive oil
1/4 cup chopped onion
9 cloves garlic
3/4 cup of water
1 tbsp splenda
1 tsp crushed red pepper flakes
1/6 cup cider vinegar

Recipe Directions for Grand Beach Beet Green Saute

  1. Wash the greens in a sink filled with cold water. Drain greens and wash a second time. Drain greens and remove any heavy stems. Tear leaves into bite-sized pieces. Set aside.

  2. In a 3 qt saucepan, heat olive oil over medium heat. Add onions, cook over medium heat 5 to 7 minutes, stirring occassionally, until onions soften and start to brown.

  3. Stir in garlic. Add water to the hot pan, stirring to loosen any particles from bottom of pan.

  4. Stir in spenda and red pepper. Continue cooking until mixture boils.

  5. Add greens, reduce heat. Cover and simmer for 15-20 minutes or until tender.

  6. Stir in vinegar and cook for 3-5 more minutes.
