I use grana di risa instead of orzo, and tomato and chilli Loyd Grossman sauce. REALLY yummy!

Recipe Ingredients for Grana di Risa Bake

2 onions, red, chopped
400 g butternut squash, cubed
2 courgettes, chopped
200 g aubergine, cubed
1 green pepper, chopped
1 red pepper, chopped
1 tbsp olive oil
10 mushrooms, closed cup, halved
10 g red chilli
2 cloves garlic
350 g pasta sauce
300 g orzo pasta, boiled
128 g rounds goats cheese

Recipe Directions for Grana di Risa Bake

  1. Saute all veg

  2. Stir in sauce

  3. Boil pasta

  4. Combine in casserole

  5. Sliced goat cheese on top

  6. Oven at 200 for 15 minutes

  7. Enjoy!
