Just like your grandma used to make, and it's a quick and easy winter warm-up.

Recipe Ingredients for Grammy's Eggflower Chicken Noodle Soup

1/4 lb. boneless skinless chicken breast
2 celery stalks
2 carrots
1/2 c. diced onion
2 T. olive oil
1 egg
2 c. cooked Rotini noodles
3 T. corn starch
3 chicken bouillon cubes
1 T. dried parsley
4 c. water

Recipe Directions for Grammy's Eggflower Chicken Noodle Soup

  1. Dice 1/4 of a large onion, the celery stalks; peel and thinly slice carrots.

  2. Dice chicken breast into 1/2-inch cubes.

  3. Saute diced chicken and vegetables (onion, celery, carrots) in olive oil in a medium (2 qt. or larger) saucepan over med-high heat till chicken is done and the onions & celery are transparent and tender.

  4. Add water, bouillon cubes and parsley and simmer over med-low heat till carrots are tender.

  5. In the meantime, cook Rotini noodles according to package directions; drain and set aside.

  6. Mix cornstarch with 1/4 C. water and whisk into soup.

  7. Beat the egg and drizzle it into the boiling soup liquid.

  8. Add cooked noodles and serve.

  9. To add flavor, cook the Rotini noodles in vegetable broth or add a couple of bouillon cubes to the noodles cooking water.

  10. Serve with sourdough toast or warm French bread.
