A yummy comfort food that can be frozen and reheated well. To reduce fat, use skim milk and low fat cheese.

Recipe Ingredients for Gramma's Macaroni & Cheese

2 cups elbow macaroni
1 1/2 cups 1% milk
4 tbsp margarine
4 tbsp flour
1 tsp mustard
2 cups cheddar cheese
1 tsp salt
1/4 tsp pepper
1 tsp parsley

Recipe Directions for Gramma's Macaroni & Cheese

  1. Add macaroni to large pot of boiling water. Cook on low until done to desired firmness. While it cooks, do the sauce.

  2. Add marg and flour to a small sauce pan. Once marg is melted, simmer for 2 minutes. Do not let it brown.

  3. Add milk slowly, stirring continually. Once it is all mixed in, add salt, pepper, parsley and mustard. Stir to combine.

  4. Add cheese a bit at a time, stirring after every addition. Let heat well but not boil. Add more milk if too thick.

  5. Drain pasta and return to pot. Add sauce and serve. Pair with homemade salmon patties and lots of steam broccoli for a yummy comfort food dinner!
