This is a modification of our grandmother's chocolate chip cookie recipe for a family member who cannot eat chocolate. Try them for breakfast!

Recipe Ingredients for Gramma's Apple Cinnamon Oatmeal Cookies

2 cups white flour
2 cups oatmeal (old fashioned)
2 cups corn flakes
1 cup butter or margarine
1 cup white sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup dried apples (cut into small pieces)
1 cup chopped pecans
1 1/2 tbsp cinnamon

Recipe Directions for Gramma's Apple Cinnamon Oatmeal Cookies

  1. Preheat oven to 350*

  2. Mix together oatmeal, corn flakes and flour, Set aside.

  3. In separate bowl, cream butter and sugar.

  4. Add eggs, vanilla and salt.

  5. In a small bowl, mix together baking soda and baking powder (this keeps the baking powder from forming lumps.)

  6. Add baking power mixture to batter.

  7. Stir in cinnamon, apple pieces and nuts.

  8. Stir in oatmeal mixture.

  9. Using a teaspoon, drop cookies on ungreased baking sheet.

  10. Bake for 10-12 minutes.

  11. Remove immediately and cool on brown paper. Yield, approximately 4 dozen.
