Recipe Ingredients for GRAINS: Quinoa Pilaf

1/4 cup quinoa
1/2 cup water
1 tbsp olive oil
1 tbsp butter
1/8 cup carrots, finely diced
1/8 cup onion, minced
1/8 cup celery, finely diced
1/8 cup sweet red pepper, diced
1/2 tsp minced garlic
1/8 tsp oregano, dried and crushed
1/8 cup almonds, sliced

Recipe Directions for GRAINS: Quinoa Pilaf

  1. First, cook quinoa: Place quinoa and water in small saucepan, bring to a boil. Reduce heat, cover, and simmer until all water is absorbed, about 10-15 minutes.

  2. Heat olive oil and butter in a medium skillet over medium heat. Saute vegetables until tender-crisp, then stir in oregano.

  3. Add sauteed vegetables to cooked quinoa and mix well. Add salt and pepper to taste. Top with sliced almonds.
