Recipe Ingredients for grains, chicken and black bean salad

1 1/2 c. oats
3/4 c. Black Beans
1/2 Red Bell Pepper
1 small Red Onion
2 ears of corn (kernals cut off from cob)
1/4 c. minced Cilantro
1 tbsp. Lime Juice
1 tbsp. Olive Oil
3/4 c. chicken breast, shredded and cooked

Recipe Directions for grains, chicken and black bean salad

  1. Cook oats according to package. You can use Rice, Barley....

  2. Heat up Olive Oil in a pan and add Onion, Pepper and Corn; cook about 3 minutes or until vegetables are tender.

  3. Add cooked oats, cooked chicken and black beans and cook for about 2 minutes.

  4. Stir in Lime Juice and Cilantro.

  5. Serve hot or cold.
