Recipe Ingredients for Grain Salad w Asparagus & Lemon

226 g 7 Grain Medley uncooked
2 1/2 cups water
226 g President's Choice Bulgur & Quinoa
2 1/2 cups water
1 pound asparagus
1 tsp Olive Oil
1 cup sliced toasted almonds
4 ounces soft goat cheese, chilled and crumbled
2 Meyer lemons, zested and juiced
1/4 cup olive oil
1 tablespoon walnut oil

Recipe Directions for Grain Salad w Asparagus & Lemon

  1. Cook the grains.

  2. Chop the asparagus into 1" pieces and quick fry in a pan.

  3. Mix the grains together in a bowl.

  4. Add the toasted almonds, asparagus and goat cheese.

  5. Mix the oils with the lemon juice and zest and taste to adjust seasoning if desired.

  6. Pour dressing over the grains.
