Stole this from Fast Paleo. Delicious as french toast too. Make sure the eggs are room temp.

Recipe Ingredients for Grain Free Sunny Banana Bread

1 cup almonds
1/2 cup shredded unsweetened coconut
1/4 cup flaxseed meal
1/4 cup Cocoa Nibs
3 bananas
4 eggs
1/4 cup Sunflower Seed Butter
1/4 cup coconut oil

Recipe Directions for Grain Free Sunny Banana Bread

  1. In a food processor, combine the almonds, shredded coconut, and nibs. Process till you get a mealy consistency. Pour mixture into a large bowl and add the flaxseed meal. Add the three bananas, mix and mash well with a fork, then beat in the eggs.

  2. Note: make sure the eggs are room temp or they will cause the coconut oil to solidify.

  3. In a measuring cup, combine the sunbutter and coconut oil and warm slightly in the microwave. Add to banana mixture and mix well.

  4. Stir in cinnamon and vanilla extract to taste. Pour into a loaf pan lined with parchment or greased with coconut oil and bake at 350 for 40-45 minuts.
