Recipe Ingredients for [Grain-free] Cinnamon Sweet Potato Waffles

1 1/2 cup sweet potato, microwaved*
1/4 cup Coconut Flour
2 whole eggs, pasture raised
6 egg whites
2 tsp vanilla extract
1/4 tsp salt
2 g Stevia
1 tsp baking soda
1/2 tsp cinnamon

Recipe Directions for [Grain-free] Cinnamon Sweet Potato Waffles

  1. "Note: if you don?t mind adding dairy then you can sub out a half cup of the sweet potato and add in 1 large scoop of vanilla protein powder.

  2. *Microwaving the sweet potato is better than baking it because it dries it out more. When I tried baking the sweet potato, it was indeed sweeter, but the waffles were undesirably wet.

  3. Microwave the potato for 7 minutes or until easily pierced.

  4. Combine all of the ingredients in a blender and blend just enough to make homogenous. Or you can use an electric or hand mixer...

  5. Pour batter into a preheated waffle maker and follow waffle maker instructions.

  6. Makes ~7 waffles.

  7. Store in the freezer.

  8. In the morning, thaw by microwaving for about a minute and then toast in a toaster or toaster oven until crisp to your liking.

  9. Top with nut butters, maple syrup, shredded coconut, a fried egg, whatever!"
