Recipe Ingredients for Graham Cracker Cookies

1/2 cup all-purpose flour
1/2 cup whole wheat flour
40 grams oatmeal (-flour made by blending 40 grams, or 1/2 cup, old-fashioned rolled oats in a blender or food processor until a flour-li
3 1/2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 tsp. (generous pinch) salt
1/4 cup honey
2 tablespoons skim milk
1/3 cup oil

Recipe Directions for Graham Cracker Cookies

  1. Preheat oven to 350.

  2. In a medium bowl, combine flours, sugar, baking soda, and salt. In a small, separate bowl, combine honey, oil, and water or milk. Add the liquid ingredients to the flour mixture and stir until dough comes together in a ball. Wrap in plastic wrap and chill in refrigerator for about an hour.

  3. Remove small chunks of the dough and roll it into a ball between your hands (use a couple of tablespoons of flour on your hands to prevent sticking). Place each dough ball on a baking sheet lined with parchment paper or greased with cooking spray and flatten it to a circle about 1/4 inch thick.

  4. Bake for 14-15 minutes, or until edges are slightly crisp.
