1 1/2 lbs beef short ribs
1/2 cup red wine
1 1/2 cups parsnips
15 baby carrots
2 quarts beef stock
2 quarts water
2 cups cooked rice

Recipe Directions for Grace's Root Veggie Beef soup

  1. Brown ribs in a dutch oven with olive oil and garlic. In crockpot, combine beef stock, 2 quarts water, and rice.

  2. Add parsnips and baby carrots

  3. at finish add .5 cup of red wine.

  4. serve with bread
