Recipe Ingredients for Grab 'n Go Cookies

0.25 cup Original
1/2 cup Old Fashioned Oats
1/4 cup Whole Wheat Flour
12 tsp Sweetener
6 tsp unpacked Sugars, Brown
2 serving Vanilla Caramel Sugar Free Powder Coffee Creamer
0.5 tsp Baking Powder
0.5 tsp Cinnamon, Ground
0.13 tsp Salt, Table
113 g Baby Food Puree
0.25 cup Pumpkin
1/4 cup Egg Beaters
0.062 cup (not packed) Raisins, Golden Seedless
0.062 cup Sweetened Dried Cranberries Dried Fruit

Recipe Directions for Grab 'n Go Cookies

  1. Preheat oven to 375 degrees.

  2. In a food processor or blender, grind cereal to a breadcrumb-like consistency. Transfer crumbs to a large bowl.

  3. To the bowl, add oats, flour, sweetener, brown sugar, powdered creamer, baking powder, cinnamon, and salt. Mix well and set aside.

  4. In a medium bowl, combine wet ingredients (pureed peaches, pumpkin, and egg substitute), and mix well.

  5. Add wet ingredients to the bowl of dry ingredients and stir until completely blended. Chop raisins and cranberries and stir into the batter, evenly distributing and making sure they don't stick together.

  6. Spray a large baking sheet with nonstick spray and spoon batter into 4 evenly spaced circles. (If you like, use a 2-oz. ice cream scoop!) Spread batter out a bit with the back of a spoon.

  7. Bake in the oven until tops of treats are just slightly crispy, 12 - 14 minutes. Allow to cool slightly on the sheet. Grab 'n go!
