Recipe Ingredients for Gourmet Vegan Chocolate Chip Cookies

8 1/2 oz bread flour
7 oz all-purpose flour
1 1/2 oz corn starch
1 3/4 tsp baking powder
1 1/2 tsp baking soda
2 tsp instant espresso powder
1 tsp kosher salt
10 oz brown sugar
8 oz sugar
10 oz margarine, vegan, melted
50 g (2 tbsp) soy yogurt
1 tsp white vinegar
2 tsp vanilla bean paste
300 grams (1.25 cups) bittersweet chocolate disks (Guittard 72% cacao are dairy-free)

Recipe Directions for Gourmet Vegan Chocolate Chip Cookies

  1. In a small bowl, mix together soy yogurt and vinegar and set aside.

  2. In your mixer bowl, cream margarine and sugars at medium speed for 3-4 minutes, until light and fluffy. Add vanilla and yogurt mixture and mix for 30-45 seconds, until combined.

  3. In a separate bowl, sift together flours, corn starch, espresso powder, baking soda, and baking powder. Use a whisk to stir salt into dry ingredients, until all dry ingredients are well-combined. Add dry ingredients to mixer bowl and mix on low for 10-15 seconds, until cookie dough just comes together.

  4. Remove bowl from mixer and gently stir in chocolate disks by hand. Cover bowl tightly with plastic wrap and refrigerate for 1-2 hours.

  5. Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat and form large, apricot-sized spheres of cookie dough. Place spheres at least 3 inches apart from each other and 1.5 inches away from edges of pan.

  6. Bake for 12-16 minutes, until golden brown.

  7. Remove from oven and place baking sheet on wire rack to cool for 5 minutes. Move cookies from baking sheet to wire rack to cool an additional 5 minutes. Find a quiet corner where you can weep your tears of joy in private, and serve warm.
