Recipe Ingredients for Gourmet Bean Blend

1/4 cup olive oil
1 large onion, diced
1 red pepper
1 yellow pepper
2 garlic cloves, minced
1 carrot, diced
5 mushrooms, portabella, mini
2 oz red beans
2 oz black beans
2 oz navy beans
2 oz yellow peas
2 oz split peas
14 oz diced tomatoes
3 oz tomato sauce
4 cups low sodium chicken stock

Recipe Directions for Gourmet Bean Blend

In a stock pot, sauté onion and beef in olive oil until beef is lightly browned. Add garlic and bell peppers. Sauté an additional 2 minutes. Add remaining ingredients and bring to a boil, then simmer on low for 3 to 4 hours. Remove bay leaves. Serve with grated Parmesan cheese and crusty Italian bread (optional).
