Slow cooked beef in a tomato and pepper sauce.

Recipe Ingredients for Goulash Soup

356 g stewing beef
1 onion
1 red pepper
400 g tinned tomatoes
1 tbsp tomato puree
300 ml water
1 stock cube
1 1/2 tbsp paprika
2 tsp thyme

Recipe Directions for Goulash Soup

  1. Dice onion and de-seed and chop red pepper.

  2. Roughly dice the stewing beef and blitz in food processor for a few seconds - do not process for too long, you still want to have small pieces, not mince or puree.

  3. Add all the above to the slow cooker crock pot and add the tin of chopped tomatoes and tomato puree.

  4. Disolve the stock cube in the water and add to the crock.

  5. Add paprika and thyme and mix well.

  6. Cook all day on low or half a day on high.

  7. NB - you may wish to add more paprika or use smoked paprika

  8. Serve with crusty bread, pref grained/grannary and a dollop of reduced fat cream fresh/soured cream (optional)
