Soup with vegetables and beef. BE AWARE: the sodium content of this recipe is not as high as stated. When using low sodium beef stock the sodium content would be much much less (5 stock beef stock no salt added = 900 mg sodium).

Recipe Ingredients for goulash soup

2 onions
1 tbsp olive oil
2 garlic cloves
5 cups beef stock, low sodium/no salt added
4 tbs tomato paste
1 lb potatoes
1 red bell pepper
1/2 leek
1 lb ground beef
2 tsp paprika
1 tsp oregano
1 tsp salt
1/2 tsp pepper

Recipe Directions for goulash soup

  1. sweat the onions in the oil. Add the meat and garlic to brown (keep the meat in big pieces, or substitute with stew beef). Add the tomato paste, cubed potastes, bell pepper (cut into thin stripes), the stock, and the spices. Boil until the potatoes are tender, about 15 min.

  2. Add chili powder/cayenne/tabasco for additional seasoning if wanted. Good served with bread.
