Recipe Ingredients for Goulash Soup

1 small onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 cup sliced cabbage
4 cans beef broth
1 small potato, diced
1 medium carrot, diced
4 tomatoes, ripe, canned
1 tablespoon paprika
1 tablespoon caraway seed

Recipe Directions for Goulash Soup

  1. Spray large saucepan with olive oil spray.

  2. Saute onion and peppers until softened.

  3. Add cabbage; cook until softened.

  4. Add broth; bring to boil.

  5. Add potato and carrot. Crush tomatoes and add along with juice.

  6. Stir in paprika and caraway seed.

  7. Simmer about 30 minutes, until all vegetables are tender.
