Creamy Fluffy Omelette with a tasty and healthy twist... and a burst of protein too. Enjoy.

Recipe Ingredients for Gorgonzola, Spinach and Mushroom Omelette

6 eggs
1 oz cheese (shredded, cheddar)
1 oz cheese (Gorgonzola)
1/2 cup spinach
1/3 cup cream
1 dash salt
1 dash pepper
1/2 cup mushrooms (diced)

Recipe Directions for Gorgonzola, Spinach and Mushroom Omelette

  1. Whisk the eggs and cream

  2. Pour into a heated skillet (lightly sprayed or brushed with oil)

  3. Add a layer of mushrooms, cheeses and let melt for a minute or two. Layer the spinach over top, sprinkle with salt and pepper. Cover with lid to let the spinach wilt (about 2 minutes)

  4. Fold Omelette over and let inside cook to your liking.

  5. Enjoy. This is so refreshing that it can be served alone, or with a side of fruit. I'm avoiding the toasted breads right now - as tempting as they are.
