Recipe Ingredients for gorgonzola proscuitto penne

1 garlic clove
1/4 cup olive oil
1/4 cup pine nuts
5 oz proscuitto
16 oz penne pasta
16 oz chicken broth
12 oz water
1/2 lb asparagus
8 oz gorgonzola
2 oz brandy
1/2 cup lemon juice
1/4 cup basil leaves

Recipe Directions for gorgonzola proscuitto penne

  1. medium heat- oil, pine nuts, garlic & proscuitto. cook for 7 minutes

  2. add penne; stir

  3. add a cup or two of broth & water at a time, boil down until almost gone; repeat several times

  4. when penne is cooked, add asparagus and finish cooking w/ remaining broth until asparagus is ready

  5. add lemon juice and brandy

  6. leave off heat and let sit for a few minutes

  7. add cheese & basil
