Walnut oil has a wonderful, nutty aroma and taste and is well worth searching out in your supermarket. If it is unavailable, substitute extra-virgin olive oil.

Recipe Ingredients for Gorgonzola, Pear and Walnut Salad

1/2 cup walnut halves or large pieces
1 large pear, ripe
4 cups salad, bitter assorted pack
1 cup (4 oz) crumbled Gorgonzola cheese
1/4 cup walnut oil
1 1/2 tbsp lemon juice, fresh
1 tsp Splenda
1 tsp Dijon mustard
1/4 tsp salt
1/8 tsp black pepper, freshly ground

Recipe Directions for Gorgonzola, Pear and Walnut Salad

  1. Heat oven to 350 degrees. Place walnut on small baking sheet and bake for 6-8 minutes or until toasted. While walnuts are toasting, dice pear into 1/2" thick cubes

  2. Remove toasted walnuts from the oven and let cool. Combine greens, pear, and cheese in a large bowl. Combine oil, lemon juice, sweetener, mustard, salt and pepper, mixing well with a fork. Add greens and cooled walnuts and toss well.

  3. Serving Suggestion: Serve with warmed French rolls
