Recipe Ingredients for Gorgonzola fettucine with Asparagus

8 ounces fettuccine (whole wheat)
3 cups asparagus
2 teaspoons butter
4 garlic cloves
1 tablespoon flour
1 1/4 cups skim milk
1/4 cup fat free cream cheese
1/4 teaspoon salt
1/2 cup blue cheese
2 tablespoons chopped walnuts
1 black pepper

Recipe Directions for Gorgonzola fettucine with Asparagus

  1. cook pasta in boiling water for six minutes. Add sliced asparagus and cook for two minutes, or until pasta and asparagus are both tender.

  2. Drain pasta and asparagus, and place in a large bowl. Melt butter in a medium saucepan over medium-high heat. Add garlic and cook three minutes. Add flour and cook 30 seconds, stirring constantly. Gradually add mik, stirring well with a whisk. Stir in the cream cheese and salt; cook for three minutes or until thick, stirring constantly.

  3. Add sauce to pasta mixture; toss to coat. Serve with gorgonzola or blue cheese and walnuts, and sprinkle with pepper.
