Recipe Ingredients for Gooseberry Pie

400 grams Flour
100 grams Sugars, Powdered
250 grams Margarine, Regular, Unspecified Oils
1 dash Salt, Table
4 large Egg, Yolk
745 grams Gooseberries
75 grams Demerara Sugar
10 grams Sugars, Granulated

Recipe Directions for Gooseberry Pie

  1. To make the pastry:

  2. Sift the flour and icing sugar into the bowl. Add the margarine and salt. With the fingertips, rub the margarine into the flour and sugar until mixture resembles fine breadcrumbs.

  3. Add the egg yolk to the mixture, stirring them in with a knife. Them use your hands to bring the dough into a ball. Knead it very lightly until it's smooth. Flatten the ball of dough out slightly, place in a plastic bag and put in the fridge for at least an hour.

  4. When the pastry is cooled at least an hour after it has been placed in the fridge, pre-heat the oven to 190c, remove one half of the pastry from the fridge, grease a large fairly deep pie dish and roll out the pasty, place into the dish making sure the pasty goes right up the sides and over the lip, trim edges. Bake blind until just firm to the touch, you can use baking beans but I don't tend to bother.

  5. Once baked remove from the oven add the prepared gooseberries and demerara sugar. Remove the second half of pastry from the fridge, roll out and place on top of the gooseberries, brushing a little beaten egg on the baked edges to ensure that the crusts stick together. Trim off any excess and pinch the remaining edges. Make a whole in the centre with a knife to let the steam escape. Brush with beaten egg, roll out the remainder of the pastry and use to decorate the top of the pie, brushing all pastry with egg. Sprinkle the pie with granulated sugar.

  6. Place in the oven, still at 190c for around 40 mins or until the pastry is crusty and golden brown. insert a knife just check that the fruit is cooked through.

  7. And serve hot, also good cold so if there is any left over can be eaten the following day.
